MANAGER: After that we need to order patties to be cooked.
Who remembers how many patties are required for Big Mac?
Nobody eats Big Mac? :)
RANDOM GIRL: Most probably 2 patties... MANAGER: Correct! 2 patties.RANDOM GIRL: Yes!
MANAGER: All the spices which are used to prepare a sandwich, are located on this table.
All the spices have Best Before time. When you come to the kitchen, you'll see the timer which controls that time.
Two on the grill, please!
This is how the caramelized bun looks like, after the sugar has melted on it.
Come closer! Don't be afraid!
In Big Mac we use a special sauce.
Then, rehydrated onions.
Then, lettuce that you've seen in the fridge, right?
Then, we put 2 pieces of pickles on the middle of the bun. There are no pickles left...
And one piece of Cheddar cheese. That's it! The only thing left is to take cooked patties and assemble the sandwich all together.
We pass the tray with the finished product to the grill table, so the worker can put patties on it.
MANAGER: May I, please?
Take off the meat carefully and put it down to the bun... That's it! Big Mac is ready!
These are finished Double Cheeseburgers.
We remove excessive fat this way, because there are two patties.
WORKER1: Is the six order on the first?WORKER2: The six is on the first.
MANAGER: In total, it takes 1.5-2 min to the cook a burger.
After the meat we taken out of the grill, the equipment is cleaned.
There are special rags for that, and we clean the grill surface, so the next set will be cooked on a clean grill.
I will show this process to you.
RANDOM MAN: Just a metal scraper?MANAGER: Yes, a scraper and a metal blade.
We clean Teflon surface with the same tool too.
Excessive fat poured out to a bin.
Moreover, at night... You’ve asked what guys are doing at night? At night, they are cleaning the grill.
They clean all the bins, all the surfaces; dismount Teflon, so the grill will be clean in the morning.
Now let’s see how we make Cheeseburgers and Hamburgers.
There will be two Doubles and four Hamburgers or Cheeseburgers.
Mustard...
Ketchup...
Rehydrated Onions...
Two pieces of pickles required for Double, 1 piece - on Hamburger and Cheeseburger.
Cheese on the forth (counter), please!
Here we will have two Cheeseburgers, two Hamburgers and two Double Cheeseburgers.
Our spices and other ingredients stored here:
Rehydrated onions, pickles, lettuce, onions, tomatoes, ketchup, and mustard.
Here is the fridge, from which we can renew our immediate supply.
Each product has its “Best Before” time that is controlled by the stickers.
For example: washed cucumbers may be stored for 24 hours.
They have been washed today at 6PM, so we may use them by 6PM tomorrow.
Please proceed further...
You can see that we produce sandwiches in non-stop mode. What's the reason?
There is a place where we store ready-to-eat sandwiches.
According to our rules, they are stored for 10 minutes at max.
Maybe you have noticed that the sandwiches are marked with such numbers.
Come here...
There is a clock. A senior kitchen worker, who coordinates the work and orders products, controls secondary “Best Before” time using this clock.
The clock face is divided to black and red numbers, like a regular clock.
For example, now it shows 58 minutes, right?
By adding 10 min, we will get red "1" timer, which means all sandwiches that arrived right now will be marked with red "1" label.
If nobody buys these sandwiches within the next 10 min, they will be thrown away.
We neither cook products 2 hours in advance nor stuff everything with ready-to-eat sandwiches.
…but keep the level of supply in accordance to sales.
If you arrive to McDonald's and there is no sandwich, that you’ve ordered and you have to wait...
This is not because we don't want to give it to you, but because we make it especially for you ?
Hot & fresh.
RANDOM MAN: Do you collect statistics on how many customers come during the day?
MANAGER: Yes. A kitchen coordinator has information about sales trends, which are printed here.
If anything changes, the manager says, e.g., "The last hour sales are on the following level."

Open Days at McDonald's. The manager shows how the real Big Macs, Cheeseburgers and Hamburgers are made. The process is shown in details. English subtitles included.
